Nick & Julianne Nield and Mike & Kristi Shaw formed friendships together while they were students at Dixie State over 12 years ago before they were married. They were joking around one night last winter about starting a food truck when the idea for Waffle Bliss was conceived. They decided to start Waffle Bliss to add fun things for students & families to do in Washington County.

Waffle Bliss opened in May 2014 & have been busy ever since! Waffle Bliss serves true sweet Belgium waffles with different spreads & fruit toppings. They also serve a delicious frozen hot chocolate drink. They cater all kinds of parties & events. Since they are mobile, their weekly locations can be found on Instagram & Facebook @wafflebliss.

Waffle Bliss has been involved with the University since it opened including participating in fundraisers for the Ambassadors, participating in DSU activities & their favorite event so far- catering a breakfast for President Biff & his staff. They love Dixie & are proud to be alumni! #wearedixie #iwenttodixie.

Nick & Julianne Nield

Nick Nield was originally from Star Valley Wyoming but moved to St George at a very young age. He was raised in the heart of Dixie and attended many basketball and football games. He pursued his education at Dixie State College and graduated from the radiography program. He also played on and coached the Men’s soccer team.

Favorite memories while attending Dixie include: winning the Great Race with friends, traveling with the soccer team, and enjoying the beautiful outdoors of Southern Utah. After graduating they both continued to show their support by spending time as assistant coaches for the women’s soccer team, where they won the PAC West Championship and a birth into the NCAA tournament.

Julianne Nield was born and raised in Salt Lake City, Utah. Her love for Dixie State College started when she moved to St. George to become a member of the Women’s soccer team in 2002. She led her team to take the National Championship in 2003. After her soccer career ended, she went on to complete her nursing degree graduating in 2006. While attending school at Dixie, Julianne met a perfect match, a member of the Men’s soccer team, Nick Nield.
They now have 5 beautiful children and call Southern Utah home. Nick currently works in the MRI department at Dixie Regional Medical Center. Julianne hangs out with their 5 kids and works as an RN for Rocky Mountain Care. They both recently started a food truck WAFFLE BLISS and enjoy being involved in the community and continue to support Dixie State University.


Mike & Kristi Shaw

Mike Shaw is from Ogden, Utah & decided to attend Dixie State because of the weather, strong athletic & academic programs. His first year of college he played wide receiver for the football team which was then coached by Greg Croshaw. After his first year of college, he went on a LDS mission to São Paulo, Brazil. Upon returning from his mission, he attended one semester at Utah State University then married his Dixie sweetheart, Kristi Munson & moved back to St. George.

He played two years of basketball for Dixie State during the last year Dixie was a junior college & the first year of being NCAA Division 2. He graduated with Cum Laude honors from Dixie State in 2008 with a Bachelor’s degree in Business Administration. He currently works at AllConnect & running Waffle Bliss. His favorite memories of Dixie are winning the Great Race in 2008 & playing collegiate football & basketball.

Kristi Munson Shaw was born and raised in Logan, Utah. After seeing pictures of palm trees on the Dixie campus during college day presentations her senior year, she knew Dixie was where she needed to be! She fell in love with Dixie as she pursued her Associate’s Degree of Science at Dixie State from 2001-2003. While at Dixie she was a member & the secretary of the Rebelette dance team, became a true Rebel, graduated with cum laude honors & met her future husband, Mike Shaw.

She finished her undergraduate education at Utah State University earning a Bachelor’s Degree in Family, Consumer and Human Development. She went onto pursue her Master’s degree in clinical mental health counseling and works as a therapist at A Southern Utah Counseling Experience & a trauma social worker at Dixie Regional Medical Center.

Kristi has stayed involved with Dixie State since she graduated. Her first job out of college was the Admission’s & Ambassador Advisor for Dixie State. Besides her career in human services, she is the head coach of the Dixie State Cheer and Stunt Team as well as the assistant coach for the Dixie Dance Team. She loves to coach, support DSU and loves working with the energy and excitement of the college students. She loves the atmosphere and community of Dixie State & has enjoyed seeing it grow & change for the better.

She spend some of the best days of her life at Dixie. She loves all of her memories at Dixie State, but her favorite memories include going to Kansas for the NJCAA basketball national championship, dancing at all the football & basketball games & winning the Great Race in 2003.

Mike & Kristi met at Dixie State while she was a member of the spirit squad & he was on the football team. They dated their first year of college & upon the return of his mission. They got red sand in their shoes & moved back to St. George right after they got married in 2005. They have two children, Scarlett & Reggie who have both been to Dixie State events since they they were just two weeks old. Read More Stories
